What is bean-to-bar chocolate?
In order to distinguish the chocolate produced by chocolatiers (small chocolate makers) from that which is mass produced (large factories), the term bean-to-bar was derived to highlight the craftmanship chocolatiers use to create their products.
Beginning around 2005, craft chocolate makers began producing ‘small batch’ chocolate, typically just a few hundred bars a month. This entails a chocolatier working directly with the cacao beans they buy and process in order to produce the quality end product we all love so much!
How does Au Chocolat source and produce bean-to-bar chocolate?
We are proud partners with the Mexican Arabica Bean Company, a Direct Trade Cacao Bean Exporter and Expert Cacao and Coffee Bean Analyzer. Our bean-to-bar chocolate is created directly from the quality organic cacao beans we purchase from 2 Canadian Importers.
Not only are the beans we use organic, direct trade, and single origin, they are also 100% traceable and sustainable.
Columbia, Dominican Republic (Butter), Honduras, Mexico, Nicaragua, Papua New Guinea, Peru, and Vietnam make up the 8 origins we source our beans from.
