The cheesesteak, a Philly icon, traces its roots back to a humble hot dog stand. In the 1930s, brothers Pat and Harry Olivieri, operating near South Philadelphia's Italian Market, decided to switch things up. Their creation: grilled beef and onions on a toasted roll. A culinary revelation, it quickly gained popularity.

It wasn't until the 1940s that cheese entered the picture. A manager at one of the Olivieri's locations, inspired by culinary innovation, added provolone to the classic sandwich. This game-changing addition solidified the cheesesteak's place in food history.
